Both Cocoa and Rooibos are extremely rich in antioxidants that prevent disease, boost the body's immune system and help slow the aging process. Rooibos alone has 50 times the antioxidants of green tea! These powerful antioxidants have been shown in numerous studies to fight viruses and slow aging. Clinical tests have shown that they destroy free radicals, limiting their damage to healthy cells. It is reported that four cups a day can lower the risk of heart disease by as much as 69%. Cocoa is also brimming with antioxidants. It is twice as rich in antioxidants as a glass of red wine, up to three times richer than a cup of green tea and up to five times richer than black tea. Rooibos seeds are planted in February and March and tended for 18 months after which they are harvested. Cut Rooibos is bound and milled to a uniform length then bruised between rollers to trigger the fermentation process, which results in the characteristic flavor and sweet aroma.

Rooibos is very forgiving! With very few exceptions you will need boiling water to bring out the full flavor of the ingredients. Steep for at least 5 minutes--the longer the better. There's really no such thing as too long, and there's no need to remove the herbs and fruit at all. But because of that, don't expect to get more than one infusion.
